Summer squash

These days, we're enjoying a bounty of summer squash. One of my favorite recipes also happens to be one of my simplest.

Simply sauté chunks of squash in a bit of olive oil. Add chopped, fresh rosemary, and sea salt to taste. Cook until the squash is a little soft (about 5 minutes). Remove from heat and add crumbled feta (we like sheep's milk).

This dish works well hot or cold and holds up well in the fridge for a few days.

Looks delicious! I will have to buy squash to try this, all the yellow squash we were growing in our garden died. I pulled out the dead stalks this morning. Healthy & easy recipe, thanks for sharing.

I do the same with fresh basil and thyme,garlic,cherry tomatoes, yellow pepper and courgettes. I love courgette :-)

Otherwise sorry for not answering your latest email, but it has been very hectic lately.

We are going to be in the US from the 22/09 to the 05/09. As we have a wedding it would be easier to see you on the second week. Just pick up the day that work the best for you and it will be perfect for us.
