When I saw organic peaches on sale for $1.99 a pound, I couldn't resist stocking up. The result, actually made by David this time, was a delicious peach salsa fresca. This batch lasted about 24 hours in our fridge before it was gone. I'm thinking I need to get some made and canned for those long, dreary winter months when fresh peaches are a distant memory.
David's peach salsa fresca:
2 large heirloom tomatoes, diced
½ red onion, diced
1 anaheim pepper, seeded and diced
1 jalepeño, seeded and diced
1 fresh peach, peeled and diced
1 tbsp lemon or lime juice
¼ c fresh cilantro, chopped finely
1 tsp olive oil
salt to taste
